Raisins Pilaf is one of the oldest and most authentic local dishes of Kurdistan, which is mostly cooked in Oramanat. It is claimed that this food is a thousand years old! It is one of the main dishes that the people of Kurdistan cook on Yalda night. In ancient times, when sheep were killed in early autumn, the meat was cooked well and then fried in oil. Then they kept it in clay pots to use it in winter. This meat was called qormeh. To cook raisins pilaf, this meat is cooked together with onions, raisins, dates and semolina. Nowadays, rice is used instead of bulgur and chicken meat is used instead of mutton.
